This cheesy, spicy, VEGETARIAN friendly dip is going to be such a win at any event! I made this for the Super Bowl and it was a huge hit, plus we even had some for leftovers. Give it a try and pair with some good tortilla chips!

Ingredients

  • 2lb of Velvetta
  • 1 8oz block cream cheese
  • 1 8oz block of pepper check cut into cubes
  • 1tbsp of taco seasoning
  • 1 can fire roasted Rotel with green chilies
  • 1 1/2 cups of ground soy chorizo
  • 1/2 cup shredded cheddar
  • 1 1/2 cup milk

Instructions

  1. Combine all ingredients except the Chorizo and Milk in a crock pot or disposable foil pan
  2. Set Crockpot to low for 2 hours or until everything is mostly melted, If you are using a grill or smoker set temp to 250° for 2-3 hours or until melted
  3. Once everything is mostly melted, give it a good stir
  4. Add in the
  5. Stir in Milk to help liquify the queso (a lot easier to dip chips in this way)
  6. Set to keep warm or place to serve!
  7. Enjoy!
