Apple & Brie Grilled Cheese

I love a little experimental moment, and that’s how this was born. My wife loves grilled cheese just the simple American cheese kind. This is a combo from both of us and an elevated combo at that. Its sweet, savory, cheesy, all on a beautiful sourdough.

Ingredients

  • 4 Slices Sourdough Bread
  • 4 Slices Applewood Smoked Ham
  • 1 Honey-crisp Apple
  • Brie Cheese
  • Cheddar Cheese (sliced or finely grated) (finely grated melts better)
  • Jam or Marmalade (I used Raspberry Rose on these and a Spiced Orange on another)
  • Arugula
  • Salted Butter

Instructions

  1. Thinly slice the apple using a mandolin
  2. Slice enough Brie to cover the slice of bread
  3. Finely grate the cheddar and set aside
  4. Start with a slice of bread, then layer brie
  5. Place sliced apples on top of the brie
  6. Layer 2 slices of ham atop the apples
  7. Spread the jam or marmalade on top of the ham
  8. On the remaining slice of bread, place the cheddar on top
  9. Heat a medium size pan with medium heat
  10. Add butter to the pan until melted
  11. Add each slice of bread to the pan and begin to grill (do not sandwich together yet)
  12. Once the cheddar is melted, then place on top of the other slice with all the fixings (I recommend using a weighted press during this stage)
  13. Flip and allow just a final melt and cook
  14. Remove from the pan and on the plate or a cutting board, open the sandwich up, and add the arugula (I do this to prevent the arugula from cooking and wilting)
  15. Slice in half and enjoy!
